Introduction

I made this as an alternative to a meat lasagna for lunch one day. The zuchini doesn't quite make up for no noodles, but my 8 year old sister went back for seconds. I used what I had on hand, but it's an easy recipe to tweak. Spinach and ground turkey are great additions. I made this as an alternative to a meat lasagna for lunch one day. Ingredients

    3-4 medium zuchini
    1 1/2 c part skim ricotta cheese
    3 tsp minced garlic
    1 cup part skim mozerella cheese
    2 cups Ragu light Tomato Basil sauce

Directions

Boil or saute the zuchini until tender. While the zuchini is cooking, mix together the ricotta cheese, and minced garlic. Once the zuchini is done, layer in a casserol dish, zuchini first, then ricotta, sauce and mozerella cheese. Repeat until all ingredients are used. Bake at 350 degrees for 30-40 minutes, or until mozerella is melted and bubbly. Makes 4 servings.
