Ingredients

    5 large shrimp, cooked and diced in to bite size pieces
    1/3 C uncooked couscous
    1/2 C chicken broth
    1/2 can of petite diced tomatoes, liquid reserved
    1 tablespoon of chopped cilantro
    1 teaspoon lime juice
    1 teaspoon lime zest
    1 tablespoon extra virgin olive oil
    salt and pepper to taste

Directions

Bring chicken broth and reserved tomato liquid (approximately 1/4 cup) to a boil in a medium saucepan. Stir in all remaining ingredients, cover, and remove from heat.

After 5 minutes, remove lid, fluff couscous with a fork, and enjoy!

    I modified this by using chicken, fresh tomato, no oil, and more cilantro. I might add a tad of oil next time after its cooked. It was very tasty, so thanks for the idea!! - 6/2/08

    This was so good! I made this as a side dish, so I increased the recipe. I used the leftovers for lunch the next day, stuffed in a whole wheat pita with Taboulleh. - 8/20/07

    I was extremely weary of this recipe b/c I had never had couscous, but I must say that I enjoyed it and I will make it again. For a healthy choice, it is tasty! - 6/19/07
