Introduction

This is an easy and satisfying recipe, can remove chicken if you'd like to go vegetarian. Adding a low fat cheese to the soup is also yummy just depends on how you like your soup. Ingredients

    6 cups potatoes, diced
    5 cups water
    2 cups onion, diced
    2 chicken breasts, boneless and skinless
    1 1/2 cups celery, chopped
    1 1/2 cups carrots, chopped
    2 Tbsp butter
    4 tsp chicken bouillion
    2 tsp salt
    1/4 tsp pepper
    1 can evaporated milk (12-13 oz)
    4 Tbsp parsley, dried

Directions

Combine potatoes, onion, water, carrots, celery, butter, chicken and bouillion and put in crockpot. Cook for 7 hours on high. After the 7 hours is up add the salt, pepper, evaporated milk and parsley, cook another 20 minutes. Makes 10-2 cup servings
