    3lb round steak
    2 medium onions chopped
    6 garlic cloves
    1 TBS chopped ginger (fresh)
    6 Lombok chilles seeded (red)
    2 C thick coconut milk
    1.5 tsp salt
    1 tsp ground tumeric
    3 tsp chili powder (optional)
    2 tsp ground coriander
    2 duan salam (6 curry leaves)
    1 stem lemon grass or 3 strips thin lemon rind
    1 tsp laos powder
    0.5 C tamarind liquid
    2 tsp sugar


cut beef into strips, place garlic, ginger, chilles and 1/2 cup of coconut into blender, pour into large sauce pan and wash blender with remaining coconut milk. Add to sauce pan with all remaining ingredients except the tamarind and sugar. Mix well and add the meat and bring to a brisk boil. Reduce the heat to medium and add the tamarind and cook uncovered until gravy is thick, stirring occasionally. Turn the heat to low and continue cooking until the gravy is almost dry stirring frequently so that the mixture does not stick to the pan. After 2.5 hours when the oil seperates add the sugar and stir constantly. Allow the meat to fry until it turns to a dark brown. Remove the lemon grass stem. Serve with white rice (optional) and vegetables
