I made this on the fly one day with items already in the pantry, and it turned out really good. Spice measurements are estimated, as I eyeballed the amounts. Ingredients

    1 can condensed cream of mushroom soup (you can use sodium reduced if desired)
    1/2 c. skim milk
    1/2 c. instant white rice (you can use instant brown rice if desired)
    1 c. chopped fresh asparagus (bottom ends trimmed and discarded)
    6 oz. raw bone-/skinless chicken breast, chopped into big chunks
    1/4 tsp. each garlic, onion, and chili powders
    Pinch nutmeg

Directions

Mix all ingredients in a small casserole dish, cover and bake at 350 F for 45 minutes, or until the chicken is cooked through.

Stir and serve. Makes enough for two servings. Stores well in the fridge to re-heat the next day.

    This recipe is easy to make and tastes great. we doubled it for dinner for three and I have two good sized portions leftover. i like the spices and I think it had nice flavor. it will go on my list of easy weeknight meals. - 1/7/13
