Introduction

Ingredients

    2 cans sweet yellow corn with reserve liquid, 2 medium yellow onions, 3 cloves of garlic, 6 oz bacon, 1/3 cup heavy cream, 4 cups of water, kosher salt and pepper to taste, 1/4 tsp red pepper flakes.

Directions

Cut bacon into 1/2 " slices and saute over medium high heat until brown and crispy in a deep soup pot. Remove bacon with slotted spoon and cool on paper towel. Drain all but 2 tblspoon of oil from pot and saute onion in pot until translucent. Add garlic and red pepper flakes and saute for another 30 seconds. Drain corn. Reserve the liquid. Add corn to the pot with onion and garlic and stir for about 5 minutes. Add the reserve corn liquid and water to pot. Bring to boil. Add salt and pepper to taste. Then simmer for 15 min more. Remove from heat. Puree soup. Add cream and serve. Top each bowl with a pinch of the bacon bits.
