Ingredients

    meatballs-
    1 lb. lean ground turkey
    2 large eggs
    1/2 c. long grain white rice
    1 tsp garlic powder or 1 clove minced garlic
    1 tsp onion powder or 1/2 small onion minced
    salt and pepper to taste
    any other seasonings you may like

    soup-
    meatballs
    4-6 small to medium potatoes cut into large chunks
    1lb. baby carrots
    2 green bell peppers sliced into strips
    any other veggies you may like
    2 cans diced tomatoes with chiles
    2 pkgs(16 cubes) knorr tomato bouillon
    water

Directions

makes about 15 12 0z. servings
in a 9 qt. pot, fill about 1/2 way with water and tomato bouillon and boil.
mix all ingredients for meatballs in mixing bowl.
roll meatballs into 1/2 inch balls.
place meat balls along with all other ingredients into boiling water.
heat on medium heat for about an hour.
serve hot.
