Introduction

Neat German cookie. This is a recipe for a low carb version of a traditional Nicholas cookie that comes out of the Rhineland. The cookie is called "Speculatius" which means "image." In Europe, the "image" is the mirror-image of a Nicholas which had been pressed into a wooden mold and then turned out on a sheet to bake in the oven. If you don't have these molds, you can roll out dough and use a cardboard pattern (about 7-inches tall) of a gingerbread bishop to cut around for the basic shape and everyone further decorates it as the imagination dictates. We simply rolled them into 2 inch diameter logs and cut 1/4 inch slices. Thin cookies are tastiest. Yum!

Ingredients

    4 c flour
    2 large eggs
    2.5 c chopped almonds
    1 1/8 c sugar
    1/8 c splenda
    1 c butter
    1 tsp baking powder
    1/8 tsp cardamon
    1/8 tsp cloves
    1 tsp cinnamon
    1 tsp cocoa
    2 tsp grated lemon peel

Directions

Blend all ingredients. Roll dough into 2 inch logs and Let set for 45 minutes in cool place. Preheat oven to 350 degrees F. Slice to about 1/4 inch thick and bake 18 minutes or until golden on a lightly greased cookie sheet.
