Introduction

All the flavor of chicken parmesan without the extra calories from breading and frying. All the flavor of chicken parmesan without the extra calories from breading and frying.

Ingredients

    2 chicken breasts, sliced thin or pounded flat
    2 cups tomato sauce
    garlic powder, onion powder, parsley, and salt
    grated parmesan cheese
    extra virgin olive oil
    4 slices mozzarella cheese (I use whole milk for flavor, even though it has more calories than part-skim)

Directions

Pre-heat oven to 400°F.

Wash and dry chicken breasts. If not using store-bought thin-sliced chicken, then slice each breast in half so you have 4 flat slices. If desired, you can put each between two pieces of wax paper and pound to flatten.

Sprinkle both sides of chicken slices with garlic powder, onion powder, parsley, salt, and grated parmesan cheese. I like to rub it in to make sure it stays.

Lightly drizzle olive oil in a 9x13 rectangular casserole dish (or any size that will fit all 4 pieces). Lay the chicken slices in the dish, turning once so both sides are lightly coated in oil (they should not be dripping with oil).

Bake for 10 minutes at 400°F, then flip and bake for another 10 minutes. Remove dish from oven and turn off heat. Cover each chicken slice with about a tablespoon of tomato sauce (more if needed) and then a slice of mozzarella cheese. You could use shredded mozzarella instead.

Return the dish to the oven for 5-10 minutes. Even though the heat is off, it will be hot enough to melt the cheese, which is all you want. Remove from oven and serve with whole grain pasta for a healthy dinner!
