Introduction

Number of Servings: 10

Ingredients

    4 cups milk
    4 tbsp whipped butter
    2.5 lbs cauliflower (1 medium head), chopped, leaves and stem removed
    1 lb Fuji apples (3 medium), chopped
    1 tbsp curry powder
    .5 lbs onions, sliced thin (about 1-2 onions)
    Salt and pepper to taste
    Sugar to taste (optional; nutr. info without)
    3 cups water
    6 basil leaves

Directions

Sweat onions in melted butter on medium heat until translucent.

Add cauliflower and apples.

After a few minutes, when cauliflower has softened a little, add water and curry.

After another few minutes, add milk.

Simmer for 25-30 minutes. When finished, add basil, salt, pepper, and, if desired, sugar. Let cool slightly before placing in blender and blending until desired consistency. Enjoy while warm and/or refrigerate for later!

    Very Good
    my family LOVES this recipe, but the apple flavor wasn't strong enough for us... so we double the apples called for. also, we like to add chicken sausage for protein! - 3/24/10
