Ingredients

1/2 onion, diced
1 bell pepper, diced
2 cloves garlic, minced
1 can diced tomatoes with juice
1 envelope taco seasoning
1 can pinto beans, drained
1 pouch minute rice, cooked and drained
Directions
Bring water to boil and cook rice as directed.
Meanwhile:
Heat skillet over med heat. Spray with cooking spray. Add onion, garlic, and peppers. Cook, stirring occasionally 5-7 mintues, until soft.
Add Tomatoes and taco seasoning. Bring to boil and cook about 2 minutes.
Add drained pinto beans and cook until mixute is hot and bubbly.
Drain rice and stir into mixture.
Serve with Natalie's sour cream sauce if wanted (nutrition info not included here.)
