Ingredients

    1/2 of a 10oz package frozen spinach, thawed and drained
    1/2 of an 8 oz package low fat cream cheese (Neufchatel) softened
    2 TBS Parmesan Cheese, grated
    2 TBS chopped green onion
    1 - 13.8-oz package refrigerated pizza dough
    1 Egg white
    1 TBS Parmesan Cheese for topping

Directions

Preheat oven to 400F. Line 2 baking sheets with foil; lightly coat foil with nonstick cooking spray. Set aside.

For Filling: in a medium bowl, stir together spinach, cream cheese, 2 TBS Parmesan cheese, green onion and 1/4 tsp black pepper. Set aside.

Unroll pizza dough on a lightly floured surface; roll into a 15 inch square . Using a pizza cutter or sharp knife, cut into 25 3-inch squares. Spoon a slightly rounded teaspoon of filling onto the center of each square. In a small mixing bowl, us a fork to combine egg white and 1 TBS water. Brush edges of dough squares with egg white mixture. Lift a corner of each square and stretch dough over filling to opposite corner, making a triangle. Press edges with the tines of a fork to seal.

Arrange the calzones on baking sheets. Prick tops of calzones with fork. Brush tops with egg white mixture. Sprinkle with remaining 1 TBS of Parmesan cheese.

Bake one sheet at a time 8-10 minutes or until golden brown. Cool slight on baking sheets, serve warm.

Supposed to make 25 squares. I do not know how many make 1 serving.''

Next time I make these, I am going to cut a larger piece of dough and put more in each dough piece.
