Ingredients

    1 cup whole wheat flour
    1 cup bran
    1/4 cup wheat germ
    1/4 Bob's Red Mill 8 grain cereal
    3 over-ripe bananas, mashed
    1/2 cup unsweetened applesauce
    1/4 cup skim milk
    1 egg
    1/4 cup brown sugar
    1tsp vanilla
    1tsp cinnamon
    1/2 tsp nutmeg
    1/2 tsp ginger
    1 tsp baking powder
    1 tsp baking soda
    1/4 tsp salt
    1/2 cup mini chocolate chips

Directions

Preheat oven to 350 degrees. In a large bowl, mash bananas. Add milk, applesauce, egg, sugar and vanilla. Mix until well-combined. In a separate bowl, combine flour, bran, wheat germ, 8 grain cereal, cinnamon, nutmeg, ginger, baking powder, baking soda and salt. Whisk to combine dry ingredients. Pour dry ingredients into wet ingredients and stir until just moistened. Fold in chocolate chips.

Pour batter into prepared muffin cups. Bake at 350 degrees 20-25 minutes or until a toothpick inserted in the center comes out clean.
