Ingredients

    2 Sweet Potatos, peeled and sliced
    1 small butternut squash peeled and cubed
    2 carrotts diced
    small red pepper, cubed
    1 onion diced
    salt and pepper to taste
    1 tbs minced garlic
    3 cups progresso reduced sodium chicken broth

Directions

Saute onions and peppers in melted butter over medium heat until onions are soft. Add diced veggies and garlic, stir and sautee for about 5 minutes. Add chicken broth, bring to a boil and reduce heat. Cook until vegtables are soft, about 25 minutes. Finally, puree in pot or mash. Top with parmasean cheese if desired.
