Introduction

This fudge is so creamy and decadent, but a lot healthier than you'd think. This fudge is so creamy and decadent, but a lot healthier than you'd think.
Number of Servings: 24

Ingredients

    1 1/4 cups Adam's Natural Crunchy Peanut Butter
    1 1/2 cups Ghirardelli 60 % Dark Chocolate Chips
    1 (14 oz) Can Fat-Free Evaporated Milk
    2 Tbs Smart Balance Buttery Spread (or any healthy butter)
    10 packets fiber Splenda (or more if you like it really sweet)
    1 tsp vanilla extract
    1/2 tsp ground Cinnamon

Directions

melt the butter, evaporated milk, peanut butter and chocolate chips in a heavy saucepan on low until all of the chocolate chips are completely melted, about 5 minutes. Remove from heat and stir in the vanilla and cinnamon. Line an 8 in. by 8 in. pan with either plastic wrap or wax paper and refrigerate for at least two hours. When fudge is set turn it out onto a cutting board, remove wrap or paper and cut into 16 pieces.

    Please let us know, when do you add the splenda fiber packets?? - 1/1/10

    I had to add confectioners sugar because this recipe would never "set up"...way to moist. Lost the "healthy" in this one. Wont make again. - 12/29/09
