A delicious way to get your veggies in with lunch. Very healthy! A delicious way to get your veggies in with lunch. Very healthy!
Number of Servings: 10


    2 crowns of broccoli (chopped), 1/2 medium red onion (chopped), 1/4 C red wine vinegar, 1T yellow (or spicy) mustard, 2t ground black pepper, 1t salt, 1/3C fat free Miracle Whip, 1/3C fat free plain yogurt, 1t lemon juice, 1C shredded carrots, 1/4t cayanne pepper


Combine vinegar, mustard, peppers, salt, Miracle Whip, yogurt, and lemon juice. Stir until well blended. Combine carrots, broccoli, and onion. Pour dressing over veggies, toss well to coat. Refrigerate until well chilled.

    This didn't take long to prepare, unlike a lot of salad recipes and the flavor was good. I might cut down on the cayenne pepper a bit next time but it was a great way to get my veggies. I did leave out the salt since I am trying to cut down. - 9/7/08
