Introduction

Ingredients

    6 large scallops (I use Trader Joes wild jumbo)
    1/2 c crumbled Feta cheese(loosely packed)
    1/4 c Chopped Kalamata black Olives
    1/3 c Chopped Tomatoes (I use grape cherry tomatoes)
    1/2 tbls capers
    11/2 tbls Olive oil

Directions

Chop Olives, tomatoes, capers and saute in Olive Oil on med heat / always moving around skillet. Remove and keep warm. Add scallops, cook 3 minutes each side or until browned. After cooked take off heat and add feta to top of scallops cover for a few minutes or until cheese slightly melted. Make sure to spoon up the melted cheese on bottom of pan over. Serve scallops over tomato/olive saute.
