Ingredients

1 lb canned lump crabmeat
3/4 cup seasoned bread crumbs
3/4 cup cornmeal
3 Tbsp scallions, minced
2 Tbsp lemon juice
2 Tbsp plain fat free yogurt
1/2 tsp paprika
1/8 tsp salt
2 Tbsp fat free egg substitute
1 small jalapeno pepper, seeded & finely chopped
1 tsp olive oil
Directions
Combine all ingredients in a medium bowl, stirring well. Shape into 8 half inch thick patties.
Coat a large nonstick skillet with cooking spray; add 1 teaspoon oil. Place over medium heat until hot. Place patties in skillet and cook 3 minutes on each side or until golden.
Yield: 8 Servings (1 crab cake per serving)
