Introduction

My husband works out of town alot, so I make this often. I just cut the recipe in half to make enough for one. Or I'll make the whole recipe and have the leftovers the next day.

This recipe can be easily multiplied to make enough for an entire family.

Number of Servings: 2

Ingredients

    1 lg chicken breast, cut in half
    1/2 cup brown rice
    1 can 98% fat free cream of chicken or cream of mushroom soup**
    1/4 to 1/2 cup salsa (I use pace picante)
    1/3 to 1/2 cup water (depending on texture and moisture you want. I prefer mine a little drier.)

    **to make gluten free, use gluten free cream of mushroom soup

Directions

Mix all ingredients in a small Crock Pot. Cook on low 4 to 6 hours, or until rice and chicken are done.

Makes 2 servings. 1/2 breast and about 1 cup of rice.

    Incredible!
    My husband really like this recipe. I precooked the chicken ahead and put the crock pot on high for an hour. I used a small crock pot so everything was ready in about 3 hours it might of been longer if I hadn't the 10 minute brown rice. I used what I had in the house. - 2/4/14
