I make these in advance to freeze for breakfast. They may seem kind of limp and floppy when you first make them, but after a quick run through in the toaster, they crisp up rather nicely. Ingredients

    1-3/4 Cups Pioneer Nonfat Buttermilk Baking Mix
    1/2 Cup Wheat Bran
    1-3/4 Cup Water (or other liquid)

    3/4 Cup PLUS 2 Tbsp Cup Baking Mix
    1/4 Cup Wheat Bran
    3/4 Cup PLUS 2 Tbsp Water

Directions

Sift together baking mix and wheat bran. Stir in water and mix well. Bake in a heated waffle iron until waffle reach desired color. Makes 16 small square waffles at 1/4 cup batter each.
