Introduction

"Souvlaki" refers to a meat dish that's cooked on a skewer. I don't like using skewers, but I still call this Souvlaki because everything else is authentic. Ingredients

    Sauce =
1/4 cup Greek Nonfat Plain Yogurt
    1/4 cup Light Cream Cheese
    1 tsp Worcestershire Sauce
    1/2 tsp Oregano
    1/2 tsp Garlic Powder
    1/2 tsp Onion Powder
    1/2 tsp Paprika
    Splash of Lime Juice
    Pinch of Ground Ginger
    Pinch of Sea Salt
    Pinch of Black Pepper
    Handful of Cilantro

    Pita =
5 links Mild Italian Sausage, casings removed
    4 Whole Wheat Pitas, halved
    2 cups Cherry Tomatoes, halved
    2 Garlic Cloves, minced
1 Red Bell Pepper, de-seeded and chopped
    1 Zucchini, with skin, chopped
    1 Red Onion, chopped
1 tsp Extra Virgin Olive Oil
    Pinch of Sage
    Pinch of Sea Salt
    Pinch of Black Pepper

Directions

1) Preheat skillet

2) Preheat toaster oven or broiler

3) Whisk all sauce ingredients together and set aside

4) Roll sausage into gumball-sized balls and place in skillet with EVOO. When sausage is mostly cooked, drain as much fat out as possible.

5) Add tomatoes, garlic, red bell pepper, zucchini, red onion, sage, sea salt, and black pepper to skillet. Toss for a couple minutes until the sausage is fully cooked. The veggies should not caramelize too much - flavor and nutrients cook out

6) Slice pitas in half and place under broiler or in toaster oven. Watch closely - it usually takes less than a minute to toast.

7) Fill pita halves with sausage-veggie mixture and top with sauce. Enjoy.
