Ingredients

    Whisk together thoroughly in a large bowl:
    2 cups all-purpose flour
    1 tablespoon baking powder
    1/2 teaspoon salt
    1 teaspoon cinnamon
    1/4 teaspoon ground nutmeg

    Whisk together in another bowl:
    2 large eggs
    2 cup milk or cream (I use 2% milk)
    2/3 cup packed light brown sugar
    1/4 cup of canola oil - recipe states that if you are not going to eat the following day to increase the oil to 1/2 cup to keep them moist overnight.
    1 teaspoon vanilla

Directions

Bake at 400 degrees for 17 minutes or until a toothpick inserted comes out clean. Makes 12 muffins.
