Ingredients
-
12 1/2 oz. Chicken Breast Tenderloins, cut in cubed pieces
1/2 Red Bell Pepper, chopped
1/2 Onion, chopped
1/2 C. Sweet and Sour Sauce
2 Tbsp. Barbeque sauce (I used Sweet Baby Ray's Honey Barbeque)
1 Tsp. Teriyaki Sauce
1 Tbsp. Extra Virgin Olive Oil (I used Crisco's)
2 Tsp. Garlic Powder
1Tsp. Curry Powder
1-2 Tsp. Crushed Red Pepper
Salt and Pepper to taste
Directions
Cut up chicken breast tenderloins into 1in cubed pieces.
Heat 1Tbsp Extra Virgin Olive Oil in skillet on Low-Medium, once pan is thoroughly coated, add chicken and cook for 3-4 minutes, stirring chicken occasionally.
Add 1Tbsp BBQ sauce and 1/4C. Sweet and Sour sauce. Stir chicken to get evenly coated.
Let chicken cook in sauces for a few minutes, then add garlic powder and some red crushed pepper (depending on how spicy you like it, you could also add some cayenne pepper).
When chicken is almost done, add curry powder, chopped peppers, chopped onions, 1/4C. Sweet and Sour, 1Tbsp BBQ sauce, and 1 Tsp. Teriyaki Sauce.
Let chicken finish cooking, stirring occasionally to let peppers and onions soak up flavor.
I serve ours over a bed of white rice (NOT INCLUDED IN NUTITIONAL INFO!)
Hope you enjoy as much as we did!!
