Ingredients

    1 1/4 cups cold water
    6 1/2 tbsp (2/5 cup) amaranth

Directions

Whisk together water and amaranth in a pot. Add salt to taste.
Bring to boil, then reduce heat and cover.
Simmer 25 minutes.

    Incredible!
    Added this to ground turkey, sweet sweet soy sauce, cumin, tamric, onions, chili pepper and black beans...YUMMMMMMM it reminds me of eatting cooked poppy seeds, they kind of burst when you bite them.. but they are soft after cooking. I loved it I will cook it and add it to other things like cookies - 4/5/11
