Introduction

A simple, easy way to dress up pasta with pantry ingrediants. I make this while the pasta cooks and then round it out with a green vegetable. A simple, easy way to dress up pasta with pantry ingrediants. I make this while the pasta cooks and then round it out with a green vegetable.

Ingredients

    1 c. canned clams
    1 c. clam juice
    1 T. sherry
    1 T. unsalted butter
    1 T. flour
    1/2 tsp. dried thyme
    pepper to taste

Directions

Cook 6 oz spaghetti or other pasta according to package directions. While pasta is cooking, open two cans of canned clams. Reserve the liquid from the cans - should be one cup - and add 1 tbsp of sherry to the liquid. Melt 1 T of butter in a small frying pan or saucepan. When butter is melted, add 1 T flour and whisk till smooth. Add reserved liquid, and whisk till smooth and thickened (bubbling gently). Add canned clams, 0.5 tsp thyme, and pepper to taste, and simmer gently until pasta is finished. Drain pasta, pour sauce over pasta, and serve immediately. 3 small or 2 medium servings.
