Introduction

I made these for the vegetarians at a famaily reunion cookout. I didn't make enough, everyone loved them. Now I make them for myself. Serve with buns. and you favorite toppings. Ingredients

    1 c. cooked carrots, chopped
    1 small onion, chopped
    1/2 c. sweet red pepper, chopped
    1 can (15oz) black beans, rinsed and drained-divided
    1 T. corn starch
    2 T cold water
    1 c mashed potato flakes
    1/4 c quick cooking oats
    1/4 c whole wheat flour
    2 T nonfat dry milk powder
    1 egg lightly beaten
    1/2 t. salt
    1/4 t. black pepper
    2 T. canola oil- divided



Directions

Saute onion, and red pepper with 1 T of the oil in a large nonstick skillet until soft. Remove from heat and set aside.

In a large mixing bowl, mash 1/2 of the black beans; combine the conrstarch and water, stir into beans. Mix in
all remaining ingrediants, including the onion and red pepper. Shape into 6 patties.

Return skillet to medium heat and coat with remaining oil.

Cook patties in oil for 5 min on each side.

Yield: 6 servings
