Introduction

I needed a pancake that was lower fat than the norm, and therefore tweaked the original recipe (which was full of eggs and more oil) to get this fluffy, amazing version. Number of Servings: 8

Ingredients

    Flour, white, 1.5 cup
    Granulated Sugar, 4 tsp
    Baking Powder, 2 tsp
    Baking Soda, .5 tsp
    Salt, 1 tsp
    Canola Oil, 2 tbsp
    Milk, Fat Free, Skim, 8 oz
    Vanilla Extract, 1 tsp
    Cinnamon, ground, 1 tsp

Directions

Makes approximately 8, 2-pancake servings.

Mix all dry ingredients together in a medium sized bowl. Make a well in the center and add the wet ingredients, mixing until everything is just combined but there are still lumps.

Spray a pan with nonstick spray and cook until the tops of the pancakes are bubbly and dry before flipping, then giving them another minute or two to finish.
