Introduction

This goes well with Coconut Rice. This goes well with Coconut Rice.

Ingredients

    3 medium sized zucchini, coursely chopped
    3 tbs olive oil
    1 15-oz can pineapple, undrained
    1 can black beans, drained

Directions

In a large pan, saute zucchini in olive oil on med heat. Once browned, add all ingredients. Heat through, stirring occasionally.
