Introduction

These plain cooked sponge rings freeze very well and they thaw quickly from frozen ready for use. They may be filled with fresh fruit such as strawberries, raspberries or fruit salad instead of adding the lemon cream topping. Ingredients

    1 Large egg
    2oz (50g) caster sugar
    Grated rind and juice of one lemon
    2oz (50g) plain flour
    2 tbsps (30ml) golden syrup
    4fl oz (120ml) double cream
    4 tbsps (60ml) lemon curd
    Chocolate decorations

Directions

Set the oven at 190 'c, 375'f, Gas Mark 5.
Grease four times four and a half inch (11cm) ring tins and place them on a baking tray.
Whisk the egg, caster sugar and lemon rind together until pale and thick. Fold in the flour, then spoon the mixture into the tins. Bake for about 20 minutes, until golden and springy to the touch. Turn out onto a wire rack to cool.
Heat the lemon juice and golden syrup until boiling. Place the sponge rings on serving plates and spoon the lemon syrup over them. Whip the cream until stiff, then lightly mix in the lemon curd. Spoon or pipe this around the tops of the rings.
Decorate with chocolate (decoration) sprinkles and serve.
