Introduction

Ingredients

    1/2 c uncooked quinoa
    1 c. beef broth
    1 tsp. olive oil
    2 cloves of garlic, sliced thin
    1 c. fresh spinach
    4 oz cooked lamb kabobs or leg of lamb, Cubed.
    1 med tomato (chopped)
    1/2 c. diced cucumber
    1/2 tsp dried mint leaves/or 2 fresh leaves chopped fine
    1 oz feta cheese

Directions

rinse the quinoa in a strainer. In a small sauce pan, add the quinoa and 1 c. beef broth. Bring to a boil over high heat, then cover and reduce heat to simmer until water is absorbed, about 10-15 minutes. Meanwhile in a skillet, heat the oil, add the garlic and saute, careful not to burn the garlic. When the quinoa is done, add it to the skillet with the remaining ingredients and toss. Add crumbled feta cheese last and stir to combine.

Makes 2 servings.
