Introduction
I made this last night for dinner and thought it was some of the best chicken I've ever had. It was tender and juicy and had a great honey mustard flavor! Ingredients

2 chicken breasts
1/4 cup yellow mustard
1 Tbsp honey
1 tsp dried rosemary
1/4 tsp crushed red pepper flakes
pinch of kosher salt
pepper to taste
Directions
1. Place chicken breasts between pieces of wax paper and pound them until they have flattened out and are of even thickness.
2. In a small bowl or cup, mix together the mustard, honey, rosemary, crushed pepper flakes, and salt and pepper. (Getting the honey to mix in takes some persistence)
3. Using a brush, spread the mixture over both sides of the chicken and let it sit for 5-10 minutes. Leave a small amount of the sauce in the bowl.
4. Cook the chicken on an indoor grill (George Forman, etc) until done. It should cook fairly quickly, in around 6 minutes. In the last minute, spread the remaining sauce on the chicken.
You could also cook this in a skillet or on a grill.
Makes 2 servings of 1 breast.
