Number of Servings: 6

Ingredients

    *One medium-large butternut squash, peeled and cubed
    *2-3 large carrots, peeled and chopped
    *One mediumish onion, chopped
    *One big can black beans (16 oz)
    *2 cans fire roasted diced tomatoes (28 oz)
    *2 tsp-3 tbs chili powder, depending on how you like your chili
    *One cup chicken or vegetable broth (nutirition info based on chicken broth)
    *One tsp salt, optional

Directions

Layer all ingredients in order in large crockpot. Cook on low 6-8 hours. Serve with a dollop of low-fat sour cream if your diet allows. Makes 6 big bowlful servings :)
