Introduction
A quick and simple recipe and very yummy..one of my husband and my fav's. I saw this recipe in a cookbook once - not sure what one so I can't give it credit. I usually do not follow recipes. Ingredients

spinach - fresh
Black Beans - large can
onion - sized to your liking - large for us
garlic, minced - 1-2 tbsp or to your taste
mushrooms - canned or fresh
olive oil - 1 tbspn approx
cheddar cheese - approx 1/3 cup per serving
sour cream or salsa for topping - 1 tbspn per serving
wraps - your choice of size or flavor
Directions
Heat large skillet (that you have a cover for - cover will be used later) and add approx 1 tbspn of olive oil.
Chop onion. We like it cut in strips. Add onion and minced garlic to skillet.
While the onion is cooking, drain and rinse beans and mushrooms. Add to onion/garlic in the skillet.
Depending on how well you like your onion cooked will depend on when you add your last ingredient - the spinach.
Add spinach and cover. Spinach cooks down quickly. Cook to desired tenderness.
Lay a tortilla wrap on plate. Put desired quantity of cheese in a row down the middle of wrap. Put approx a cups worth of spinach/bean mix on top. Roll and top with some salsa or sour cream. Voila! Um, um, um....delicious!
