Introduction

Ingredients

    1 (13-15 oz) can black beans
    1 (13-15 oz) can petite diced tomatoes
    1 (13-15 oz) can sliced or diced potatoes
    1 (6-8 oz) can whole kermel corn
    1 teaspoon chopped garlic (optional)
    2-4 Tablespoons chopped onion (red or yellow)
    1-4 Beef Boullion cubes
    2-3 cups water

Directions

Place all ingredients (empty cans) except corn into large pan or slow cooker. Rinse tomato and black beans cans with one cup water each, and add to pan. In small pan boil 1 cup water and dissolve beef cubes (can use vegetable stock or cubes), then add them to pan. Add garlic and onion (if using) to pan. Cook on stove top for 40 minutes, in slow cooker on low 2-3 hours. Add corn in last 20-30 minutes of cooking. Makes about six 1 to 1.5 cup servings.

If desired, you can add a small can of diced green chiles and / or cooked ground meat or meat substitute. This soup freezes really well because of the canned potatoes and goes really well with corn bread or corn muffins.
