High Protien Raw Vegan meal with Amaranth High Protien Raw Vegan meal with Amaranth
Number of Servings: 6

Ingredients

    1/2 c Amaranth
    1 1/2 c veggie broth
    3c. fresh spinach
    1c. celery
    1c. sweet bell pepers, red
    1/2 c cilantro
    1/2c green onions
    1c. garbonzo beans, cooked
    3 grated carrots
    juice of 1 lemon
    4T walnut oil
    1 T cumin
    S&P to taste

Directions

Boil 1/2 c Amaranth in 1 1/2 c veggie broth

Mean while chop:

3c. fresh spinach
1c. celery
1c. sweet bell pepers, red
1/2 c cilantro
1/2c green onions

Mix together in large, non-reactive bowl and then add:

Cooked Amaranth
1c. garbonzo beans, cooked
3 grated carrots
juice of 1 lemon
4T walnut oil
1 T cumin
S&P to taste

mix well and let set for several hours or over night in the fridge to let flavors combine!
