Introduction

Ingredients

    1/2 cup butter or margarine
    1 cup sugar
    1 large egg
    1 cup grated carrots
    1/3 cup skim milk
    1 tsp. vanilla

    2 cups whole wheat flour
    2 cups rolled oats
    2 Tsp. baking powder
    1/4 Tsp. salt
    1 tsp. cinnamon

    375F for 12-15 minutes

    Cream butter and sugar. Add egg. Add carrots, milk and vanilla.
    Stir in remaining ingredients. Mix well. If mixture is too dry add a couple tablespoons of water. Drop by spoonfuls on a greased cookie sheet and cook. Frost if desired. You can add 1 cup of raisins but this is not calculated in the nutritional value of the recipe.

30 cookies = 1 tbsp batter each

    I used brown sugar; 1/2 cup extra aded to second cookie sheet made them very good IMHO. - 8/28/10
