Ingredients

    Peppers, sweet, red, fresh, 1 large (2-1/4 per lb, approx 3-3/4"
    Tomatoes, red, ripe, raw, year round average, 1 medium whole (2-3/5" dia)
    Onions, raw, 1 large
    Green Peppers (bell peppers), 1 cup, chopped
    *Keilbasa - Turkey, 2 oz
    Garlic, 2 clove
    *Extra Virgin Olive Oil, 1 tbsp
    *Basmati Rice (uncooked), 1 cup
    Water, tap, 2 cup (8 fl oz)
    Shrimp, cooked, 6 oz
    *Hot Chili Peppers, .06 cup, chopped or diced (optional)

Directions

Chop onion, peppers, keilbasa and garlic into small bite size pieces. Saute in olive oil for 3 to 5 minutes.

Stir in the rice, tomatoes, chilis and boiling water.

cover and cook over med heat for 10 to 12 minutes.

stir in the shrimp, add more water if necessary.

Once shrimp are cooked through, remover from heat, and serve.
