I created this easy breakfast dish for my dad who was trying to lower his cholesterol naturally. He loves spicy food, but for a milder breakfast, omit the peppers. Ingredients

2 large egg whites
1/4 cup cubbed fresh eggplant
2 tbsp chopped onion
1 clove garlic, chopped
1 small banana pepper, chopped
1 cup spinach leaves, lightly packed
1/4 cup diced potato
1 tbsp shredded cheddar cheese, or cheese of your choice
Directions
Makes one scramble/omlet.
Over medium-high heat, cook potatoes in a small non-stick skillet for 1-2 minutes. Add in the eggplant, spinach, garlic, onion, and banana pepper, stirring until onion softens, about 2 minutes. Pour egg whites over entire mixture and rotate pan so that the egg reaches the sides, do not stir, allow the egg to set, about 3 minutes.
Once the egg has cook and is no longer translucent, add the cheese to the middle of the omlet.* Cook until cheese has melted and turn out onto a plate, flipping the omlet in half to enclose the cheese. Enjoy!
* I cover the skillet with a lid to help melt the cheese and get the top of the eggs to set so that the bottom doesn't get over cooked.
