Ingredients

    1 medium raw onion
    1/3 red sweet pepper, 1/3 yellow sweet pepper, 1/3 green bell pepper
    3 medium baby zucchini
    1 cup crimini mushrooms
    1 half chicken breast, skinless and boneless
    1 tbsp EVOO
    1 tspn LITE seasoning (of your choice), paprika and garlic powder
    1/3 cup half and half (can use fat free, I can't find it yet in Calgary)
    about 2/5 of a 454 gram pkg of Catelli Spaghettini

Directions

Julienne the onion, peppers (I used different colors), and zucchini. Slice the shrooms thinly.Set veggies aside. julienne the half chicken breast. Season the breast with a third of the seasoning, 1 tsp paprika and 1 tspn garlic powder. Toss to coat thoroughly. Boil pasta with a pinch of Kosher salt. Drain and set aside. Heat EVOO, in a heavy large non stick skillet, brown chicken strips (do NOT overcook). Remove, add onions and peppers, saute partially, then add zucchini, saute together, add mushrooms, saute, add back chicken, half and half and heat. stir in parsley and drained pasta. Can sprinkle a bit of parmesan grated on top !
Makes 4 servings of one and a half cups
