Introduction

This is a different twist on an old favorite, meant for one, but can be multiplied easily. This is a different twist on an old favorite, meant for one, but can be multiplied easily.

Ingredients

    2 oz Mai Fun (glass noodles)
    1 slice Mozzarella Cheese (optional)
    5-7 slices of Pepperoni, cut into strips then halves (optional)
    4-5 olives cut into quarters or slices (optional)

Directions

Measure the noodles dry, most come packaged similar to block and should be around the 2 oz mark. These noodles cook up to about 10-11 oz so don't think it wont be enough.

1. Bring water to a boil, once the water is boiling, put the noodles in, shut off the stove and let the noodles sit in the hot water for about 10 minutes.

2. While you are waiting for the noodles to cook up, take 1 mozzarella slice, or if you have the 8 oz mozzarella cheese that is traditionally used for pasta salad, you can measure out the serving size and add that also. Cut the pepperoni slices and cheese into strips one way, then back over the opposite way so you end up with small slices about 1 inch long.

3. After you cut the cheese and pepperoni, check the noodles, make sure they sit in the hot water for at least 10 minutes. Once they are finished, drain them and run cold water over them.

4. From here, you can either drain them well and add them to a bowl along with the cheese, pepperoni and 2 tablespoons of Italian dressing and eat that way or you can add everything together and put in the fridge for 15-20 minutes if you want it colder.

The olives are optional, you can just cut them into quarters or mini circles and add them. Be creative, try it with some peppers, baby tomatoes or ham. Glass noodles are very flexible. Enjoy!
