Ingredients

    1 lb ground chicken
    1 medium stalk of celery, diced
    ½ c diced green bell pepper
    1 medium onion, diced
    1 c beef or chicken broth
    2 medium garlic cloves, minced
    1 habenero pepper, diced
    1 jalapeno pepper, diced
    1 can condensed tomato soup (10 ¾ oz)
    1 can tomato paste (6 oz)
    1 can peeled diced tomatoes, with liquid (14.5 oz)
    1 can red kidney beans, with liquid (20 oz)
    1 can chili beans in medium sauce, with liquid (16 oz)
    1 tsp salt
    1 tsp oregano
    1 tsp cumin
    ½ tsp freshly ground black pepper
    2 tbsp chili powder
    Shredded sharp cheddar cheese and/or lowfat sour cream (optional)

Directions



Combine chicken, celery, bell pepper and onion in a large saucepan and brown over medium heat. Drain excess liquid. Return to stovetop and add garlic, habanero and jalapeno; cook for 2 minutes, stirring constantly. Add remaining ingredients and bring to a boil. Cover and simmer over low heat for 30-40 minutes, stirring every 5-10 minutes. Serve with shredded cheddar cheese and a dollop of sour cream, if desired.
