    Italian Sausage, pork, 1lb (can use turkey)
    Onions, raw, 1 cup, chopped
    Celery, raw, 2 cup, diced
    Carrots, raw, 2 cup, chopped
    Olive Oil, 1 tbsp
    Spinach, fresh, 4 cup
    dried lentils, 2 cup
    Chicken Broth, 3 L (12 cups)
    *Mc Cormick Italian Herb Seasoning, 2 tbsp
    salt and pepper to taste


1. crumble and brown sausage
2. remove from pan
3. add onions, carrots and celery to pan and saute until tender
4. add italian seasoning
5. add lentils
6. add chicken broth simmer until tender, about 40 minutes
7. add baby spinach until wilted

makes 12 1.5-cup servings

  • Great recipe. I substituted kale for spinach and added the kale same time as lentils. Also cooked lentils a little longer than 40 mins. - 8/4/10

  • Good recipe. I love lentils and my husband like the addition of the sausage. I did add a little more spice to "kick it up a notch". - 3/8/10
