Introduction

This is the recipe on the back of the Ocean Spray Cranberry bag. I substituted Splenda Sugar Blend for plain sugar, V8 Fusion (light) Peach Mango instead of the orange juice, and orange extract vice the orange peel. You can also use frozen cranberries just in case you want to enjoy some cranberry goodness without worrying about having fresh cranberries on hand (we freeze several extra bags during the holiday season so we won't run out:) This is the recipe on the back of the Ocean Spray Cranberry bag. Ingredients

    2 cups flour
    1 cup sugar (1/2 cup Splenda Sugar Blend for Baking)
    1-1/2 t baking powder
    1 t salt
    1/2 t baking soda
    3/4 cup orange juice (I used V8 Fusion light Peach Mango)
    2 T vegetable oil
    1 T grated orange peel (I substituted 1 tsp orange extract)
    1 egg, well beaten
    1-1/2 cups Ocean Spray Fresh (or frozen) cranberries, coarsely chopped
    1/2 chopped nuts (I used walnuts)

Directions

- Preheat oven 350F.
- Grease 9x5 loaf pan (I used Can't Believe Its Not Butter).
- Mix dry ingredients (flour, sugar, baking powder/soda, and salt) in medium mixing bowl.
- Mix wet ingredients (orange juice, oil, orange peel, and egg) in different small mixing bowl.
- Stir wet ingredients with dry until well blended.
- Stir in cranberries and nuts.
- Spread evenly in loaf pan.
- Bake for 55 minutes or until toothpick inserted in center comes out clean.
- Cool on rack for 15 minutes.
- Remove from pan; cool completely.
- Servings: Approx. 18 slices (1/2 in cuts).
