Introduction
This is a recipe from Allrecipes.com that I made some modifications to. Omitted green pepper, celery and salt. Changed bread crumbs to Cheerios, used 1 cup half and half with 2 cups water instead of 3 cups milk., used red potatoes instead of regular potatoes, and changed a few measures on the ingredients. Ingredients

4 cups cubed red potatoes
2 large carrots, sliced
8 cups water
4 cups cooked ham
2 Tbsp chopped onion
1/2 cup butter
1/4 cup flour
1/4 tsp pepper
2 cups shredded Mexican four cheese
1 cup Cheerios
Directions
Makes 8 servings. Preheat oven to 375 degrees F
1. In a saucepan, bring the potatoes, carrot, celery and water to a boil. Reduce heat; cover and cook about 15 minutes or until tender. Drain. In a large skillet, saute ham and onion in 3 Tbsp. butter until tender. Add to the potato mixture. Transfer to a greased 3 quart baking dish.
2. In a saucepan, melt the remaining butter; stir in flour until smooth. Gradually add milk and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; add cheese and stir until melted. Pour over the ham mixture. Sprinkle with Cheerios. Bake, uncovered for 25-30 minutes or until heated through.
