Directions
Place a small amount of olive oil in the bottom of a non stick pan on high heat. Salt & Pepper salmon to taste. Place in the pan and cover cooking for until slightly browned. Turn salmon and cook until slightly browned on the other side.
When salmon is nearly cooked through and add a tablespoon of capers and the zest and juice of 1/2 lemon. Add a splash of white wine (1/4 cup) if desired. Cover and cook salmon for another 2-3 minutes until most of the wine and lemon juice are reduced. Ready to serve. Place on plate and pour capers and any juices over the salmon.
