Introduction

If you like garlic, you will like this cheeseball. Butter makes it slightly creamy, but can be left out to cut calories if you prefer a denser cheeseball. I made this for a Halloween carry in and added green food coloring to make it a goblin cheeseball. The ears are tortilla chips that I painted with green food coloring and the hair is celery leaves. Ingredients

    2 packages neufatchel cheese
    4 tablespoons light butter
    1 tsp minced garlic
    1 tablespoon dijon mustard
    1 package ranch salad dressing mix

Directions

Allow Cream Cheese and butter to sit out at room temperature and soften. Using a handmixer, blend butter and cream cheese. Combine garlic, dijon mustard, and ranch dressing with the cream cheese and butter. Form into a ball and refrigerate for a few hours; preferably overnight. Serve with crackers or assorted vegetables. Makes approximately twenty 1/8 cup servings.

*If I am not preparing this for my vegetarian friends, I will mix in about 3 oz of dried beef. This will only add 6.5 cal .08 g fat .115 g carbs and 1.33 g protein per serving.
