Introduction

from the back of the can - used 1 tsp evoo instead of 2 tbsp butter, added twice as much broccoli and a second can of soup. Could have used less pasta and more broccoli and gotten fewer servings.

I made this and thought, WOW, that's a lot of food. It's supposed to be 4 servings, but my big 10 inch skillet was piled high, but then my teens came home with two extra mouths. I ate about a cup, 3 of the teens ate about a cup each, the third probably about 3 cups, and my hubby ate about 2 cups - so use less pasta and you will have a regular family size meal.

Ingredients

    8 oz barilla plus spaghetti
    2 cups fresh (or frozen) broccoli flowerets
    1 tsp olive oil
    1 pound skinless boneless chicken, cut into bite size pieces
    2 cans (10 3/4 oz) campbell's condensed cream of mushroom soup
    3/4 cup skim milk
    6 Tbsp grated Parmesan cheese
    pepper and Italian seasoning

Directions

Prepare the pasta, adding the broccoli for the last 3 minutes of cooking time, drain and set aside.

Meanwhile, heat the oil in a skillet over medium-high heat. Season the chicken with Italian seasoning and pepper to taste and cook in the hot oil until well browned, stirring often.

Add the soup, milk, cheese, and 1/4 tsp pepper to the chicken, stirring until smooth. Add the spaghetti/broccoli, stir to coat, cook until mixture is hot and bubbling, stirring occasionally.

Serve with additional parmesan if desired (not included in nutritional analysis)
