Number of Servings: 10

Ingredients

    One Butternut Squash
    one large shallot
    3 cups chicken broth
    1/2 cup half and half
    2 tbsp olive oil
    4 tbsp maple syrup
    nutmeg
    salt & pepper to taste

Directions

Rub squash with olive oil and roast in a 350 degree oven until tender (around 45 minutes). Saute shallots in olive oil then add remaining ingredients. Simmer for 30 minutes. Puree with any tool you like (stick blender is the best, but you could use a food processor or regular blender). Makes 10 - 1 cup servings.
