Number of Servings: 8

Ingredients

    1/2 lb ground beef
    1 medium onion, chopped
    1 can diced tomatoes
    2 cans hominy, or 1 can hominy + 1 can sweet corn
    1 small can diced green chiles
    1 can kidney beans or black beans
    1 can pinto beans or ranch style beans
    1 pkg taco seasoning
    1 pkg ranch dressing mix
    1 cup water

Directions

In a large pot, cook the onion and ground beef on medium heat until beef is browned. Drain the meat. Add all other ingredients (do not drain cans), and bring to a boil. Turn heat down to low and simmer for 45 minutes. Serve with light sour cream and low fat cheddar or colby cheese, tortilla chips, and/or chives.
