Introduction

Ingredients

    Spinach, fresh, .6 package (10 oz) (remove)
    *stop & shop cannellini beans, 1.75 cup (remove)
    *Grape Tomatoes, 2 cup (remove)
    *Trader Joe's Organic Whole Wheat Rotelle Pasta, 3.25 cup (remove)
    Garlic, 3 cloves (remove)
    Onions, raw, 1 medium (2-1/2" dia) (remove)
    Olive Oil, 1 tbsp (remove)

Directions

Cook pasta as it should be cooked. When done, use the boiling water to wilt the spinach.

Cook oil over medium heat. When hot, throw in onion. Cook for a few minutes. Maybe 5? Add garlic and cook for a few more minutes. Add grape tomatoes (sliced in half) and cannelini beans (a whole can, thoroughly rinsed).

Add a couple teaspoons of Italian seasoning. Cover and cook on medium low for a few minutes.

Add the bean, onion, garlic, tomato mixture and the wilted spinach to the pasta. Toss.

Optionally, you could serve with some grated parmesan or feta cheese.
